Cascara liqueur from Panama Geisha coffee. 2022 harvest, originating at Los Lajones Estate.

Cascara is another coffee product. It is the dried fruit that wraps the bean: what is left once the coffee has come out. It is not roasted coffee and tastes nothing like it, so this is not a coffee liqueur either —what is fermented here is the fruit, not the seed.

That coffee comes from Graciano Cruz, at HIU Farms, in Boquete. A Geisha whose harvest was sold as green beans; this is the part that normally gets thrown away.

The name comes from the bloom: the white flowers of the coffee tree, which appear before the fruit whose husk is fermented here.

750 ml, 32% abv.

The photographs on this page come from the night we photographed it.

Tasting note

Fruity, floral and elegant, with notes of dried cherry, hibiscus and honey. Lively acidity, a long finish recalling citrus and dark fruit.

The night we photographed Flores Blancas

Ricardo Bremner turned up with the camera. We finished around five, and he took a couple of bottles for his people.
